My MawMaw used to make this a lot when I was younger. My mom got the recipe from her and now I’m sharing it with you all! Though there’s hardly anything to it, it is delicious and filling! Attached is a picture of what it looked like when I cooked it yesterday for dinner. ^^
1 Can of Beef Stew (or you could cook your own roast beef beforehand if you prefer; cook the roast and break it up into chunks and save a few cups of the beef for the recipe)
1 Can of Mixed Vegetables (or you could chop fresh veggies, or even use a frozen bag of veggies which is what I do)
1 Serving of Rice or Quinoa (both are great for this recipe)
- Cook the rice or quinoa according to the package directions, then set it to the side to cool a bit. Make sure you cook the rice/quinoa in a big enough pot so that all of the ingredients will fit into it later.
- If using fresh or frozen mixed vegetables, go ahead and cook those now to your liking and/or according to the package directions (if using fresh it can take awhile, cook them until they are no longer crisp/raw).
- Combine vegetables and beef with the rice/quinoa, and mix thoroughly. Add salt/pepper to taste.
- Serve in a bowl by itself or with some crusty bread or a roll and you’re done!
Depending on how many people you are cooking for, this can go a very long way and you’ll have leftovers if you don’t devour it all at once! :p You could substitute the meat for tofu to make it vegan if you’d like, and I’m sure it would be just as good!
